Not so Sweet

In an attempt to put a healthier version of mashed potatoes on the table, I tried mashed sweet potatoes last night. Weight Watchers provided a recipe for which I had all ingredients, including the non-fat greek yogurt...bonus.

I was rather proud of myself for offering such a colorful side dish full of Beta carotene, vitamin A and fiber.

"What is this?" was the question of the night, but everyone tried some. "Interesting." was Erin's comment. Zach's replay went like this, "At first I was like sweet, then I was like pumpkin, then I was like Blaachhhh, then it was back on my plate."!! That kid cracks me up.
Surprisingly there were leftovers...that didn't make it to the fridge. Oh well, at least I tried. Looking forward to good old fashioned mashed potatoes later in the week with sour cream and butter. Better save some points.

  3. Try mashed cauliflower! Its amazingly good and alot like mashed potatoes. I have a great recipe!
